Ingredients

  • 1 1/2 cups rice
  • 2 Qt whole milk
  • 1 tsp salt
  • 5 Cups water
  • 4 Strips lemon zest
  • 1/2 Stick margarine
  • 2 Cups sugar
  • 4 eggs yolks

Directions

  1. Stir continuously anytime heat is being applied.
  2. Bring water, salt, lemon, and margarine to a boil.
  3. Add rice, cook 20 minutes.
  4. During the 20 minutes add milk one cup at a time.
  5. Add sugar and let boil a few minutes longer.
  6. Turn off heat.
  7. Mix egg yolks with a little milk.
  8. Add to rice and stir well.
  9. Turn on heat, bring to a boil.
  10. Once boiling, remove from heat.
  11. Pour in cups and let cool.
