Caldo Verde

Delfina, Dinner, Entrée, Lunch, Portuguese, Soup, Vegetarian Option

A hearty, creamy, potato soup traditional in Portugal. Excellent for Lent Fridays.


  • 4 Qt. Water
  • 4 Tablespoons Olive Oil
  • 4 Big Potato’s cut in half
  • 1 Small Onion, cut in quarters
  • 1 Head of Kale
  • 1 Clove Garlic
  • Salt


  1. Boil until potatoes fall apart. Blend until smooth with a wand mixer.
  2. Cut 6 – 8 Kale Leaves, cut into thin strips.
  3. Boil water.
  4. Put greens in a bowl, add boiling water, and stir.
  5. Add Kale to boiling caldo, cook for about 15 minutes.
  6. Serve with orzo pasta.
