- 3 Potatoes
- 1 Onion
- 1 Red/Green Pepper
- 1 Cup Ham Chunks
- Bacon (cut in squares and cooked)
- ½ Cup Cheddar Cheese Chunks
- Sour Cream
- Boil potatoes the night before.
- Peel potatoes, cut in 1″ cubes.
- Fry bacon.
- Cut onions and pepper in 1″ pieces.
- Using a small amount of oil from bacon, fry onion and pepper
- Once onion is browned, add potato and ham, fry together until done.
- Add cheese and put lid on pan until melted.
- Serve with salsa and sour cream.
