Montana Potatoes

Makes Four Servings

  • 3 Potatoes
  • 1 Onion
  • 1 Red/Green Pepper
  • 1 Cup Ham Chunks
  • Bacon (cut in squares and cooked)
  • ½ Cup Cheddar Cheese Chunks
  • Salsa
  • Sour Cream


  1. Boil potatoes the night before.
  2. Peel potatoes, cut in 1″ cubes.
  3. Fry bacon.
  4. Cut onions and pepper in 1″ pieces.
  5. Using a small amount of oil from bacon, fry onion and pepper
  6. Once onion is browned, add potato and ham, fry together until done.
  7. Add cheese and put lid on pan until melted.
  8. Serve with salsa and sour cream.
